Pommard en Brescul
From a plot located on the steep slope, just before the valley of Fontaine Lulunne. Facing east above Pezerolles and Les Epenots this is a stony hillside plot, that ripens later than the 1er Crus.
100% Pinot Noir, partial whole cluster.
The must is cold macerated for 5-6 days and fermented in wooden vats for around 10 days. After that a post fermentation maceration to lower the temperature of the wine. The pomace is pressed in a pneumatic press and placed in oak barrels for 14-18 months for maturation. 50% new barrels and 50% 1 time used barrels.
