Tasting Note
Written by Alain Chavy
Wines from Puligny-Montrachet are typified by aromas and flavors of green apple and lemon and tend to be tauter and firmer on the palate compared to wines from neighboring villages. Ageing in a small percentage of new French oak barrels lends accents of toast and vanilla. Structured white wines with high acid and grip, Puligny-Montrachet is destined for long ageing

Alain Chavy crafts elegant and enduring white Burgundies from 17 acres in Puligny-Montrachet. Domaine Alain Chavy was established in 2003, with vineyards in Puligny-Montrachet, Chassagne, Meursault, and key premier crus like Les Pucelles preserved.
Residing in Puligny-Montrachet with his family, he operates from a rare new underground cellar, refining vineyard and cellar practices using lutte raisonnée methods for weed control.
In the cellar, Alain ferments in barrel, utilizing 15% 400-liter puncheons and up to 25% new 228-liter pièce for aging. His wines express the terroir, characterized by restrained elegance, ripe fruit, and minerality, ensuring enduring quality.
