Spontaneous fermentation, regeneration of the perpetual reserve in wooden foudres every year. A mixture of the young wines’ freshness (17) and the perpetual reserve complexity. Maturation and ageing: 10 months in barrels and stainless steel tanks. Residual sugar: 2 G/L
