Ebroussage Manual (April, May, work on the soil), leaf stripping by hand (June, July), machine hedge cutting, green harvest, manual harvest, sorting in the vineyard and 2nd sorting at the winery. Processing HVE specifications and no weedkiller since 2000.
Vinification: 100% destemming, Inox vats
Ageing: ageing in new oak barrels (100%) for 13 months. SO2 and white earth filtration.

Jean-Michel Guillon, originally from Paris, switched to winemaking in Gevrey-Chambertin after retiring from aeronautics in 1980. Known for his fondness for new oak barrels, he humorously calls himself "the biggest oak barrel consumer" in the area.
He established a prestigious Domaine with support from friends like Rene Galland and the renowned Henri Jayer. Their wines, spanning esteemed appellations such as Mazis-Chambertin and Clos de Vougeot, reflect a distinct Pinot Noir style praised by critics like Allen Meadows.
In 2020, Jean-Michel Guillon was elected as "Winemaker of the Year 2020" by Guide Hachette (Wine Guide Book)
