Decanter 95, October 2020
From a parcel planted at the very top of the slope in thin soils by Thierry’s grandfather more than 70 years ago. This was fermented and aged in large oak (about 10% new) to produce a wine of prodigious concentration, with a concentrated citrus aroma and firm, flinty minerality on the nose that opens magically on the palate to show unexpected richness and density. Superb.

The Pillot family's winemaking history began in the 1880s with Jean Baptiste Pillot in Chassagne-Montrachet. Successively, his sons Henri and Alphonse expanded the estate post-World War I, with Henri's son Paul further enlarging the vineyard holdings, acquiring prestigious plots like Caillerets and Grandes Ruchottes.
After Paul's retirement in 2004, his son Thierry assumed control of Domaine Paul Pillot. Joined by his sister Chrystelle in the late 1990s, Thierry manages the 13-hectare estate spanning Chassagne-Montrachet, Saint-Aubin, and Santenay.
Notably, Thierry has introduced innovative practices such as reducing new oak usage and utilizing 350 L barrels, resulting in wines that exhibit remarkable terroir expression, precision, and minerality.
