The Gamay from the Moulin a Vent Champ de Cour is farmed in a 0.5ha parcel of 70 years old vines, sitting in a granite soil with manganese veins. (single vineyard)
The grapes are kept with 100% whole cluster, and do semi-carbonic maceration, followed by fermentation in concrete tanks.The temperature is kept under 30¢XC.
Matured in used oak barrels (3-10years) for 8 months. Bottled without filtration.
