X-Omni Vineyard Chardonnay

Craig Williams and his family own X Omni Vineyard, which is a fascinating site in the southern reaches of the Eola-Amity Hills. ¾ of the vineyard are densely planted blocks with 15 distinct clones of Chardonnay. The fruit sourced for X-Omni comes from two blocks planted between 2014 and 2016. The vines are planted in mixed volcanic basalt soils, facing south-southeast. Farming is LIVE-certified without herbicides.

100% Chardonnay. Block 5 was crushed and allowed to soak in the press for 2 hours before a slow, long pressing. Block 4 was crushed and pressed quickly and firmly this lot was lightly chaptalized. Both lots were browned for 12-24 hours of cold settling before a sulfur addition. Ambient yeast fermentation began in steel and completed in a mix
of new and neutral French oak barrels. Full malolactic, and matured in 45% new French oak. Cold stabilized, filtered and bottled at 18 months. 1140 bottles produced.
