This is a family owned domaine based in Savigny and currently farming 13 hectares of vines. History of the family dates over 100 years in the region.

The domaine built its reputation with Jean Marc Pavelot, who took over the domaine from his father Edouard in 1969. Jean Marc lead the domaine to produce riper, softer and more aromatic wines than the ones produced by his father.

In 1997 Hughes Pavelot, the eldest son of Jean Marc started taking more responsibilities for the winemaking, and more recently Pierre Yves his younger brother has also joined the domaine.

Vinegrowing in the domaine is traditional with chemicals usage kept to a minimum. Most vineyards are ploughed and on the more fertile parcels the domaine plant cover crops.

Production is split 90% Pinot Noir (mostly in Savigny and Savigny 1er Crus, but also vineyars in Beaune, and Pernand Vergelesses) and 10% Chardonnay (All in Savigny les Beaune),

With Hughes Pavelot in charge the domaine is producing some of the most reputable wines in Savigny.

Savigny Les Beaune Rouge

100% Pinot Noir. Fruit from 5 hectares divided in 9 different lieux dits (including Aux Guettes 1er Cru and Guetottes) planted with 40+ years old vines.

The grapes are hand picked with sorting in the vineyard and in the winery. The stems are removed in most previous vintages, but increasing the amount of whole cluster % in recent vintages.

The vatting period last between 15-18 days, starting with a pre fermentation cold maceration. The fermentation of the village wines takes place in cement tanks with indigenous yeast, and is maintained below 34¢XC.

Press wine is used according to the vintage and the wines mature in neutral oak barrels for 12 months. After maturation the wines are racked and blended in tank to be bottles unfined, and lightly filtered.
