Fruit from a 3.8Ha single parcel, with south east exposure, and Oolitic limestone and marl soils.
Numerus Clausus is made from only 10% of the whole Gravieres holding, making use of the 60-70- year old vines from old massal selections of 100% Pinot Noir.
After sorting in the vineyard and in the winery, the grapes are de-stemmed and then directly put in tank. Cold pre-fermentation maceration is performed for 5 days. The spontaneous fermentation then starts. The grapes will stay in tank for roughly 3 weeks during alcoholic fermentation. The wine is then put in oak barrels by gravity (35% new oak) for 14 months. No fining is performed. Only the best barrels from this old vine are preserved. Certified Organic
