香檳歷史源遠流長，最早可追溯自中世紀，眾所周知，只有用香檳區出產的葡萄所釀造的氣泡酒才能稱為「香檳」。但是誰發明「香檳」

卻是眾說紛紜，詳細已不可考究。

Champagne has a long history that can date back to 17th century. There are many stories about who actually invented Champagne. But Dom Pérignon did come up with the second fermentation in the bottle, which makes him the undisputed founder of Champagne as we know it.

發明者雖不可考，但香檳是由法國修道士Dom Perignon進一步發揚光大。當時技術有限，人們不知道寒冷天氣會令酵母休眠，便以為整個釀酒的發酵過程已完成，便裝瓶儲存到酒窖。

天氣回暖時，酵母甦醒再次在瓶二次發酵，產生二氧化碳形成氣泡，早期的酒瓶經常因為氣壓關係而爆裂。當時Dom Perignon無意中嚐到這種「氣泡酒」並感到驚為天人，而他往後一生都醉心鑽研如何提升香檳的風味。
