The NV Extra Brut Le Clef de Sept Arpents Premier Cru is a blend of 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier with 30% of a perpetual reserve started in 2012 and aged in foudre. Mirabelle-scented fruitiness is fragrant on the nose. The palate has the appealing tart freshness of a ripe cider apple, not an euphemism for cider overtones at all but describing the slight astringency of tart apples. While the foam is frothy and youthful, the underlying fruit has pristine freshness and fizzes away with its inherent and beautifully tart brightness, showing gentle rye crumb autolysis. Winemaking 


La Clé de Sept Arpent is a perpetual blend, or Solera style, dating back to the 2012 vintage. Grapes come from a few small parcels, 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier with this bottling from 2019 base. Extra-Brut, with 3 g/l dosage.

Spontaneous fermentation, regeneration of the perpetual reserve in wooden foudres every year. A mixture of the young wines freshness (17) and the perpetual reserve complexity. Maturation and ageing: 10 months in barrels and stainless steel tanks. Residual sugar: 2 G/L
