Since taking over from the Jaboulet family, winemaker Caroline now works with her teams in a single-minded quest for perfection. They began double sorting the grapes (in the vineyards and in the winery). The vineyards are now certified organic and grown biodynamically, and built a gravity operated cellar that started working in 2010.

In 1224, a knight named Gaspard de Sterimberg, returned from the Crusades seeking calm and serenity from the horrors of war. Awed by the beauty and dramatic vistas of Hermitage, he settled at the top of the hill where he built a stone chapel to be used as a place for prayer and refuge. The chapel was purchased by the Jaboulet family in 1919 and has been the name of their iconic Hermitage red ever since.

La Chapelle is made from the rockiest parcels of Le Meal(limestone), Les Bessards (granite), Les Rocoules (galets) and Les Greffieux.

The vines age vary from 40-60+ years old, completely converted to biodynamic in 2006.
The grapes 100% Syrah, are 100% destemmed, and fermented parcel by parcel. The amount of new French oak used for ageing is around 20% new every year. Yields around 10-15hl/ha.
The wine production was reduced to 24.000 bottles a year.
