Ponsot takes a very individual approach, using no chemicals in the vineyards. No sulphur addition is used for vinification or bottling. Grapes are sorted in the vineyards, 100% destemmed and brought in for fermentation with only natural yeasts. The domaine doesn't use new oak for elevage, normally used barrels are sourced from Comtes Lafon or Jacques Prieur. The wines are racked once, before bottling and not fined or filtered.
