Les Chaumes 1er Cru comes from just over half a hectare of vine split over two parcels.
Hand picked, 80 to 100% destemmed. Fermented from 15 to 18 days, in open oak vats at a low temperature (controlled by thermo-regulation).
Matured In oak casks for between 16 and 20 months (between 60 and 80% new). Bottled with no fining and no filtering.
