Fruit from a 0.41Ha parcel with east and southeast exposure and marly-limestone soil
Les Ecussaux is a Climat on Auxey-Duresses with a surface of 3,17 ha. The origin of the name does not come from écus but rather from écluse. Indeed, a watercourse, probably more important at the time, is present in the bottom of the parcel. A fishery must have been installed there.
After a sorting in the vineyard and in the cellar, the grapes are destemmed and directly placed in vats. A pre-fermentation cold maceration of 5 days is carried out. The fermentation starts with indigenous yeast. The fermentation lasts for 3 weeks and the wine ages in oak barrels for 15 months (20% new barrels). Bottled without filtration or fining. Organic
