Pommard 1er Cru Rugiens - from one single parcel of 65 years old vines. These are usually darker than other 1er Cru from Pommard, and with an exceptional length.
100% Pinot Noir , all destemmed.
The must is cold macerated for 5-6 days and fermented in wooden vats for around 10 days. After that a post fermentation maceration to lower the temperature of the wine. The pomace is pressed in a pneumatic press and placed in oak barrels for 14-18 months for maturation. 50% new barrels and 50% 1 time used barrels.
