The Matrots originally began as negociants in the Hautes Côtes, but Joseph moved to Meursault and began domaine bottling immediately after the First World War.
In 2009 Thierry and his wife Pascale took over from his father Pierre and the wines from the domaine have been named Thierry and Pascale Matrot since than.
The vineyards have been farmed organically since 2000 though are not certified.
The Auxey Duresses fruit comes from vineyards with 35 years of age in average, 100% destemmed, macerated at 10°C from 3-6 days, than fermented with indigenous yeast from 12-18 days. Punch downs and pump overs are done 2 times per day and the wine is matured for 15 months in 20% new French oak. Blended in vats for 3 months before bottling.
