Located in the villages of Adong, Xidang, Sinong and Shuori at the foot of the sacred Meili mountain, Ao Yun vineyards range in altitude from 2,200 to 2,600 meters, enabling the Cabernet Sauvignon grape to express the full refinement of this unique terroir.
Produced from 314 plots totaling nearly 30 hectares of vineyards, each terroir type is vinified separately.
To compensate the 25% lower oxygen levels at high altitude Au Yun adapted its winemaking by increasing aeration during maceration, prolongin maceration and doing malolactic fermentation in new barrel and in permeable earth jar, using less SO2.
