Established in 2001 the vineyards are located on the Northern valley of the active volcano Etna, where the best single vineyards are located.
The estate farms 13ha of vines trained with the bush vine system grown organically and biodynamically. The new vineyards are planted with ungrafted vines in volcanic soils. Soil tilling is not practiced to avoid evaporation of the scarce water from the winter rains.
Munjebel is produced with 100% Nerello Mascalese from 60+ years old vines from vineyards in Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-Porcaria, Crasà, Piano dei Daini. The grapes are 100% destemmed, lightly crushed and fermented with indigenous yeast in large concrete tanks. The wine is preserved in contact with the skin for 60 days. Maturation are also done in large tanks.
