Timo grew up in the Württemberg region of Germany, where his family have been making wine for more than 400 years. He studied winemaking in Australia, stayed and founded Mayer together with his wife.
Mayer is a 2.5ha farm producing hand crafted, single vineyard wine. They believe that wines are made in the vineyard and therefore try to interfere as little as possible in the natural winemaking process.
Grapes are sourced from De Bortoli in Dixons Creek in the northern Yarra Valley.
After hand-picking the fruit is fermented 100% whole-bunch with wild yeast in old oak. Wines are left on lees for a year with only one handling into the blending tank at bottling where they add a small amount of sulphur.
