Fruit from a 0.31Ha parcel with east and southeast exposure and marly-limestone soil
Les Ecussaux is a Climat on Auxey-Duresses with a surface of 3,17 ha. The origin of the name does not come from écus but rather from écluse. Indeed, a watercourse, probably more important at the time, is present in the bottom of the parcel. A fishery must have been installed there.
After a direct pressing of the whole clusters and a decanting stage in vats, the must is directly put into oak barrels and the alcoholic fermentation starts naturally. The wine is aged on its lees in the same barrels for 12 months (20% new barrels). Bottled without filtration or fining. Organic
