The Clos de La Coulée de Serrant was planted in the 12th century (1130) by Cistercians Monks and remained a vineyard ever since. Today Nicolas Joly owns the whole 7-hectare vineyard which is a rare monopole AOC.
Since 1984 when the domaine finished the conversion to biodynamic, no synthetic chemical products, insecticides, systemic products or nitrates have been used.
Grapes are harvest in tries during 3-4 weeks to ensure the ripeness and botrytis.
The wines are made from old vines of Chenin Blanc affected by botrytis and yield only about 20-25hl/ha.
Fermentation takes place in 500L barrels, and matured for 6-8 months in the same barrels with only 5% new every year. Around 50.000 bottles are produced.
